Catering Services Melbourne - Find the Hidden Oriental spices In The market
Sure we have all tried the nominal variety of over produced Oriental ingredients in our major supermarkets, but how about those real ingredients to be found tucked away on the shelves in the back of the Oriental groceries, the ones that the Asians must have.
There are plenty of unique ingredients to test, here at Best Catering Services in Melbourne Victoria, what I find best is to ask as many questions as you can, whilst in the Chinese supermarket - its amazing how helpful another shopper or shop assistant willbe. Especially if you are an Aussie like me, I find they will go out of their way not just to explain what the item is, but how to cook it, just like their mama used to!

One of my favourites is Candlenut which I found for the first time in Bali last year, whilst attending a cooking lesson there. They are popular in Hawaii too and I must say straight up, DO NOT EAT THEM uncooked; they must be first cooked before consuming as they are a little poisonous raw. The Indonesians love them in their curries as they create a beautiful creamy texture and if you are unable to source them, you may use instead macadamia nuts though not as bitter as candlenut. So grind the nuts in a mortar & pestle and cook in a dry pan with your chosen spices. It will thicken up any curry and make it rich and satisfying. You can use it in place of coconut milk and the dish ends up having a mild nutty and almost buttery taste to it.
Another one of my favourites is lemon grass, you can buy it fresh from good Asian supermarkets and the other option is check in the refridgerator. Again you should get out the mortar and pestle and grind away, but the results are well worth it. I find here at Best Catering Services in Melbourne Victoria it’s those little additions, the ones that are easy to forget about, that make all the difference between a tasty meal and a memorable and incredibly satisfying feast. Try and stay away from the dry packaged version, its just like the same difference between powdered ginger and fresh ginger, almost a totally different ingredient. Now you don’t have to be concerned about poisoning yourself with this one, cook it off in the wok with your onion, it needs a fair bit of heat into it, to bring out its citrus smell and taste.
I hope you find and enjoy these special ingredients, remember to dig deep into the Oriental supermarket, ask lots of questions and experiment, its incredible what we can create just when we seek a little further. And your friends will be satisfied with the result! Best Catering Services in Melbourne Victoria
